Driftwood is a beautifully creamy and soft textured, almost mousse like, cheese. Dusted in ash, with a geotrichum rind (which makes the outside appear crinkly) it has subtle peppery and earthy undertones, as well as some fresh tasting citrus notes.

Driftwood is hand made at the White Lake dairy at Bagboorough Farm  in Shepton Mallet, where they make around 12 fantastic goat’s milk cheeses as well as ewe’s milk and cow’s milk cheese.
