A Gouda made from goat’s milk to produce a rich caramel tasting firm cheese

A raw milk hard goat’s cheese made in the traditional farmhouse Gouda style. It is made by the Gutshofer family in the eastern Netherlands near to the German border.  It is aged in warm cellars for around 8 months, washed and turned regularly where it forms a natural rind. As the cheese ages the paste turns from softness to a tangy, spicy acidity. Towards the end of the maturing process the cheese is rubbed with caramel.

The result is a wonderfully sweet yet balanced cheese which is very moreish and quite unique.
