This hand-made Roquefort has been produced continuously by the Combes family since 1923. Vincent Combes is a master cheesemaker and “affineur” and the grandson of Henri who began the business almost a century ago.

The cheese curds from the Lacaune sheep breed milk are hand ladled into moulds, hand-salted with sea salt on one side and the edge, and 3 days later, on the other side.

The texture is moist and slightly crumbly, the cheese has a sharp blue bite which is beautifully balanced with the intense rich ewe’s milk which has a clean, and almost nutty taste.
