Dutch cheeses are often characterised as very large wheels of hard cheeses which can be matured for many years. This is because the curds are cut into very small pieces and then heated -producing cheeses which are known as "cooked" cheeses. Our Old 48 month Gouda has an intense, umami almost caramel taste and a very satisfying crystalline texture.
