Washed rind cheeses are regularly washed with brine or alcohol during the maturation process, thus developing a sticky, usually orange rind and a strong, pungent aroma. This process enhances their creamy, bold flavours and distinctive smell. Classic examples include the legendary Epoisses, and the delightful Munster; we stock unpasteurised versions of both!
