Unpasteurised, or raw milk cheese, retains the natural enzymes and bacteria that contribute to its rich, nuanced taste, offering a depth and character often unmatched by pasteurised varieties. However, we recognise that certain vulnerable groups, including pregnant women, young children, the elderly, and those with weakened immune systems might be better suited to pasteurised cheese, so we make sure we always have a good selection of delicious pasteurised cheeses available.
