Brebirousse is a French cheese created by the well known Fromagerie Berthaut in the Burgundy region. Made from sheep's milk, it has a creamy texture with a washed rind and a distinctive reddish-orange hue. Brebirousse is noted for its tangy, robust flavour. It is not protected by PDO or AOC status, but it adheres to traditional production methods.
