Garrotxa cheese, revived by Catalan cheesemakers in the late 20th century, is made in the Garrotxa region of Catalunya, Spain. Made from pasteurised goat’s milk, it has a semi-soft, creamy texture with a greyish rind. The cheese offers a mild, nutty flavour and a slightly earthy aroma.
