Rachael Reserva is a made by the White Lake Dairy using unpasteurised goat's milk and vegetarian rennet. It is matured in an Alpine style for a minimum of 12 months giving it a full, rich and complex flavour. It has an initial sweetness that is followed by a savoury nuttiness and ends with a zesty tang. It is semi-hard and the rind is washed in brine. It won a Bronze Award at the British Cheese Awards in 2024.
