Roncal comes from the Roncal Valley of Navarra, Spain. It is made with unpasteurised sheep's milk. This hard cheese features a firm, slightly crumbly texture, a rich, nutty aroma, and a robust, tangy flavour. It holds PDO (Protected Designation of Origin) status.
